Emulating the refined Cru Beaujolais style, it avoids the high acid, low tannin, candy like character of Beaujolais Nouveau. Extended maceration enriches its color and tannins. Hand picked grapes and wild fermentation, with 25% whole bunches, contribute to its distinctive profile.
